cinco de mayo.

Ah the American-made drinking holiday of Cinco de Mayo is upon us once again. I personally love this holiday and the fact that most people have no idea what it stands for. It's not Mexico's Independence Day like most think. The original celebration was a response to the resistance to French rule in Mexico, but in the 80s Mexican beer companies started taking advantage of the holiday for marketing purposes. Sounds like another holiday I know. Cough, cough... St. Patty's. Regardless, it's fun, has great drink specials and if you are a true Texas you love every minute of it!
 
I feel like Cinco de Mayo automatically means tacky Mexican stripes (you know, those blankets?), pinatas and sombreros, but it doesn't have to necessarily. Below are some Mexican-inspired tablescapes that will also have you summer-ready in no time. The best part about this setup? It's all reusable - saving time and money!

Lime Sorbet Skinny Margarita
(100 cal. per serving; serves 4)
Ingredients:
1 lime, cut into 4 slices
1/4 cup sugar
4 cups (2 pints) lime sorbet
4 oz tequila

Directions
1. Start by rubbing the lime wedges around the rims of 4 glasses. Place sugar on a small plate and turn each glass upside down, dipping the rims in the sugar to coat.

2. Next place 1/2 cup of sorbet in each glass and pour 1 tablespoon of tequila over the top of each glass. Serve with a small spoon.
