buffalo chicken, mozzarella & blue cheese flatbread

So I have been slacking on posting my clean eating recipes, but I feel like I'm doing a disservice to the WORLD by keeping this one to myself - enter the Buffalo Chicken, Mozzarella & Blue Cheese Flat bread.


These healthy little flat breads (made on Ezekiel bread) make my life so much easier. They are super tasty, low carb, CLEAN & filling (my 6'5 boyfriend doesn't even finish one!)

What You'll Need:
- Olive Oil
- Fresh Mozzarella (one small log)
- Blue Cheese Crumbles (a small handful)
- Ezekiel 4:9 Tortilla
- Chicken (DUH, I like tenders because they are easier to cook)
- Frank's Red Hot Sauce
- Salt, Pepper & whatever seasonings you like (I use a product similar to Mrs. Dash - Quick and easy!)

Steps:
- Pre-heat over to 550 degrees
- Spread a little olive oil on your tortilla (place on greased baking sheet)
- Add pieces of mozzarella & sprinkle the blue cheese on top
- Grill your chicken in a skillet with a little olive oil and the Frank's sauce (add more if the pan dries up)
-  When the chicken is done - cut in up into small pieces and sprinkle on your tortilla on top of your cheeses and olive oil
- Place in oven for 5-7 min. Keep a close eye on these since they cook quickly
